Mexican Chicken

- 4 chicken breasts, cut into chunks shopping list
- 1 can cream of chicken soup (I like low fat) shopping list
- 1 can stewed tomatoes (or 4 medium tomatoes, diced) shopping list
- 1/2 - 1 packet taco seasoning (the more you add the spicer it will be) shopping list
- 3/4 cup rice shopping list
- 3/4 cup water shopping list
- 1/2 cup cheese (optional) shopping list
How to make it
- Put rice, water and chicken into a baking dish.
- In a seperate bowl, mix soup, tomatoes taco seasoning. Add to the baking dish and stir.
- Bake, covered, at 350 for 45 minutes (until chicken and rice is cooked). After cooking for about 25 minutes, stir to keep rice from sticking to the bottom, add a little water if necessary (1/4 cup). Add cheese (optional) 5 minutes before end of cooking time.
