Blueberry Cake

- 1 1/3 c all purpose flour shopping list
- 2/3 c cornmeal shopping list
- 6 Tbsp vegetable oil..i use sunflower shopping list
- 1 Tbsp vanilla shopping list
- 10 Tbsp butter at room temperature (approx 2/3 cup) shopping list
- 1 1/2 tsp salt shopping list
- 3 c fresh blueberies...i do use frozen thawed shopping list
- 2 tsp baking powder shopping list
- 2 tsp baking soda shopping list
- 2 lg eggs shopping list
- 1 tsp honey shopping list
- 3/4 c plus 3 tbsp sugar, divided shopping list
- 1 c ricotta cheese shopping list
- 1/3 c plain yogurt shopping list
How to make it
- Spray a 10 inch springform pan and set aside.
- Mix together flour ,cormeal, baking powder and soda.
- Whisk oil, eggs and vanilla in another bowl.
- Beat butter,, 3/4 cup sugar plus 2 tbsps and salt until creamy.
- Add egg mixture. Beat to blend. Beat in flour mixture just to blend. Add ricotta cheese and yogurt.. Beat on low to blend.Put 1/2 the batter in pan and smooth out add 1 1/2 cupsof the blueberries. Spoon remaining batter over top, spreading to cover. Sprinkle remainig blueberries over topand sprinkle with the last tbsp of sugar. Bake approx 1 hour and 15 mins. in 325 degree oven.Cool...serve warm with homemade vanilla ice cream.
