How to make it

  • Spray a 10 inch springform pan and set aside.
  • Mix together flour ,cormeal, baking powder and soda.
  • Whisk oil, eggs and vanilla in another bowl.
  • Beat butter,, 3/4 cup sugar plus 2 tbsps and salt until creamy.
  • Add egg mixture. Beat to blend. Beat in flour mixture just to blend. Add ricotta cheese and yogurt.. Beat on low to blend.Put 1/2 the batter in pan and smooth out add 1 1/2 cupsof the blueberries. Spoon remaining batter over top, spreading to cover. Sprinkle remainig blueberries over topand sprinkle with the last tbsp of sugar. Bake approx 1 hour and 15 mins. in 325 degree oven.Cool...serve warm with homemade vanilla ice cream.
