How to make it

  • In a bowl, mix together the first six ingredients (herbs and spices) and pour the contents onto a plate.
  • Create a layer at the bottom of your slow cooker that consists of your onion wedges, halved garlic,and beer.
  • Heat up a medium frying pan with with enough oil cover the bottom and get it nice and hot.
  • One at a time, take your pieces of pork and rub your seasoning mixture onto all sides of the pork. Make sure to get the seasoning into all the crevasses and/or folds of meat.
  • Sear each side of the pork in your frying pan. Then place them into your slow cooker. Set it on the low setting for 5 hours and leave it alone.
  • By this time your house should smell of deliciousness. You have two options from this point....
  • You can do the fast version....Leave the meat in the juices. Take two forks and shred the carnitas to your preference. serve and enjoy.
  • However, some people desire the chewy, kind of crispy, burnt ends of authentic lard fried carnitas (as i do). If so, skip the lard. Heat your oven to 400F. Place the carnitas "chunks" onto an baking sheet and let cook for 15-20 minutes. Then take two forks and shred.
  • Which ever way you choose, it will be important that you pour some of the juices from your slow cooker over the oven fried carnitas after you've shredded them.
