How to make it

  • First take out a large cooking stock pot & put aside. Then get the chopping board & wash meat throughly, take a regular soup pot and put aside. chop any excess large pieces of meat. Put into soup pot & boil with water,during the process of cooking ladle the fat at of the meat as it boils,Cook meat until tender , about 4-5 hours until meat almost falls off of ox tail. While this is cooking chop all your veggies & put aside,or frig until it is time to put into stock pot. When the meat is done take half of the meat stock & pour into stock pot.Add all your veggies & your quarter cabbage & cut 2-3 inch ear corns into stock pot. Add cooked meat, and then fill the remainder of the pot with stock or water, then add 1 or 2 cans of tomato sauce, herbs like oregano,rosemary,basil, parsley,salt,pepper & garlic. Cook for about a hour. When done put into serving bowl, serve w/Spanish rice & tortillas white or corn..
