Blueberry Oatmeal Crumble Bars

- 3 cups fresh or frozen blueberries shopping list
- 1/2 cup granulated sugar shopping list
- 2 tablespoons orange juice shopping list
- 1 tablespoon cornstarch shopping list
- 2 cups old fashioned rolled oats shopping list
- 3/4 cup flour shopping list
- 3/4 cup brown sugar, packed shopping list
- 1 1/2 teaspoons grated orange zest (or 1/2 teaspoon lemon juice) shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1 stick butter, melted shopping list
How to make it
- Preheat oven to 375 degrees.
- For filling:
- In a medium saucepan stir together blueberries, granulated sugar, orange juice and cornstarch.
- Bring to a boil over medium high heat stirring often to reduce until mixture is thick and the berries breakdown, about 15 minutes.
- Scrape berry filling into a medium bowl and set aside.
- While the filling is cooking, make the crust.
- For crust and crumble:
- In a medium bowl, mix together oats, flour, brown sugar, orange zest (or lemon juice) and baking soda.
- Add melted butter and blend thoroughly until mixture resembles coarse crumbs.
- Reserve 3/4 cup mixture for topping.
- Transfer remaining mixture to a 9-by-9 inch baking pan, coated with vegetable oil spray.
- Press firmly into bottom to form a crust.
- Spoon filling over crust in an even layer.
- Sprinkle with remaining topping.
- Bake in preheated oven 30 to 35 minutes.
- Cool before cutting into 9 bars.
