How to make it

  • Preheat oven to 375 degrees.
  • For filling:
  • In a medium saucepan stir together blueberries, granulated sugar, orange juice and cornstarch.
  • Bring to a boil over medium high heat stirring often to reduce until mixture is thick and the berries breakdown, about 15 minutes.
  • Scrape berry filling into a medium bowl and set aside.
  • While the filling is cooking, make the crust.
  • For crust and crumble:
  • In a medium bowl, mix together oats, flour, brown sugar, orange zest (or lemon juice) and baking soda.
  • Add melted butter and blend thoroughly until mixture resembles coarse crumbs.
  • Reserve 3/4 cup mixture for topping.
  • Transfer remaining mixture to a 9-by-9 inch baking pan, coated with vegetable oil spray.
  • Press firmly into bottom to form a crust.
  • Spoon filling over crust in an even layer.
  • Sprinkle with remaining topping.
  • Bake in preheated oven 30 to 35 minutes.
  • Cool before cutting into 9 bars.
