How to make it

  • Heat skillet on medium-high heat and saute veggies in olive oil. Season with salt and pepper. Cook until just tender and remove from heat.
  • In a large bowl, add eggs with 1/4 cup water or milk and beat until color is uniform. Add cream cheese and stir until almost completely combined with eggs. Add bread, veggies, chicken, and hot sauce. Mix until everything is covered with eggs.
  • In a 9 by 13 pan, spray with non-stick spray and add mixture. Bake at 350 for one hour, or until center is set.
  • Note: veggies can be interchanged with any combination and chicken can be omitted
