Parve (non-dairy) Corn Muffins

- 1 c white cornmeal shopping list
- 1 c flour shopping list
- 1/2 c sugar shopping list
- 1/2 tsp kosher salt shopping list
- 2 tsp baking powder shopping list
- 1/4 c parve margarine, melted shopping list
- 1 egg shopping list
- 1/4 c honey shopping list
- 8 oz vanilla soy milk shopping list
How to make it
- Preheat oven to 400 deg.
- In large bowl, stir together all dry ingredients.
- In separate bowl, melt margarine and beat in egg. Mix in honey and soy milk.
- Add mixture to dry ingredients. With a wooden spoon, gently mix until well combined.
- Divide into 12 paper-lined muffin cups and bake 18-20 minutes or until tops spring back when pressed lightly.
