How to make it

  • I decided to make my own egg replacer powder as I refuse to pay £6 for a box of something that’s as cheap as peanuts.. Essentially what some of the very well known egg replacers are made of, are simply potato starch and tapioca flour.
  • Put both flours in a tupperware container and shook very well to mix. I am going to use it in the baking of cakes from now when the recipe calls for either eggs or the egg replacers sold in shops.
  • You can use it in exactly the same ways, 2 tablespoons of water are added to 1 to 1 and 1/2 teaspoons of this egg replacer to mimic the leavening properties of 1 egg in cakes.
