How to make it

  • 1. In a large saucepan, heat the olive oil over medium heat.
  • 2. Add the onions and capsicum and saute until the onions are almost brown.
  • 3. Add tomatoes and garlic and saute until the tomatoes are tender.
  • 4. Stir in cumin and paprika and simmer for a minute.
  • 5. Pour in the stock and raise the heat to a high. Stir regularly.
  • 6. When the mixture boils, add in the fish and mushrooms.
  • 7. When the mixture returns to a boil once again, reduce the heat to a low. Simmer until fish turns opaque throughout.
  • 8. Stir in tofu, preserved lemon, parsley, coriander and salt and stir for 30 seconds. Garnish with chopped parsley.
  • 9. Ladle into bowls and serve immeadiately with rice if preferred.
  • 10. Enjoy :D
