Moroccan Fish Tagine-awesome

- 1/2 a yellow onion, finely chopped shopping list
- 1/2 a yellow capsicum (pepper), seeded and diced shopping list
- 1 clove of garlic, minced and chopped shopping list
- 1 tomato, seeded and diced shopping list
- 1/2 a block of tofu, chopped shopping list
- 300g of salmon, cubed shopping list
- 4 white button mushrooms, finely sliced shopping list
- 1 slice of lemon, chopped shopping list
- 1/2 teaspoon paprika shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 tablespoon coriander, chopped shopping list
- 1/2 tablespoon fresh parsley, chopped shopping list
- 1/2 tablespoon olive oil shopping list
- 2 cups chicken stock/broth shopping list
- 1/2 teaspoon salt shopping list
How to make it
- 1. In a large saucepan, heat the olive oil over medium heat.
- 2. Add the onions and capsicum and saute until the onions are almost brown.
- 3. Add tomatoes and garlic and saute until the tomatoes are tender.
- 4. Stir in cumin and paprika and simmer for a minute.
- 5. Pour in the stock and raise the heat to a high. Stir regularly.
- 6. When the mixture boils, add in the fish and mushrooms.
- 7. When the mixture returns to a boil once again, reduce the heat to a low. Simmer until fish turns opaque throughout.
- 8. Stir in tofu, preserved lemon, parsley, coriander and salt and stir for 30 seconds. Garnish with chopped parsley.
- 9. Ladle into bowls and serve immeadiately with rice if preferred.
