How to make it

  • 1. sift flour, sugar, baking powder, bicarb. of soda, salt and egg replacer in one large bowl
  • 2. then add your poppy seeds and grate in the zest of two lemons
  • 3. in a measuring jug, combine water, soya yoghurt oil and vanilla extract
  • 4. pour the liquid over the dry ingredients and mix well
  • 5. bake in a greased loaf tin in a pre-heated oven at 180 degrees celcius for about 40 mins or until a toothpick comes out clean of the centre of your loaf
  • 6. once the cake has cooled down, remove it from the tin and place it on a plate
  • 7. for the syrup, juice the two lemons into a small saucepan and add sugar
  • 8. bring to a boil and simmer for a few minutes
  • 9. allow to cool so that the syrup becomes thicker and then pour over cake
