Moist Lemon And Poppy Seed Loaf

For the cake:
- 175g plain flour shopping list
- 175g caster sugar shopping list
- 150g soya yoghurt shopping list
- 100ml sunflower oil shopping list
- 50g poppy seeds shopping list
- 8 tbsp water shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp bicarbonate of soda shopping list
- 4 1/2 tsp egg replacer shopping list
- 2 tsp vanilla extract shopping list
- 2 zests of lemon shopping list
- 1/4 tsp salt shopping list
For the syrup:
- juice of 2 lemons shopping list
- 100g of sugar shopping list
How to make it
- 1. sift flour, sugar, baking powder, bicarb. of soda, salt and egg replacer in one large bowl
- 2. then add your poppy seeds and grate in the zest of two lemons
- 3. in a measuring jug, combine water, soya yoghurt oil and vanilla extract
- 4. pour the liquid over the dry ingredients and mix well
- 5. bake in a greased loaf tin in a pre-heated oven at 180 degrees celcius for about 40 mins or until a toothpick comes out clean of the centre of your loaf
- 6. once the cake has cooled down, remove it from the tin and place it on a plate
- 7. for the syrup, juice the two lemons into a small saucepan and add sugar
- 8. bring to a boil and simmer for a few minutes
- 9. allow to cool so that the syrup becomes thicker and then pour over cake
