Creamy Garlic Chicken & Pasta

- 1Tbs EVOO shopping list
- 2 pkgs cooked chicken Breast Strips (by luncheon meats) shopping list
- 1 onion chopped fine shopping list
- 1 clove garlic crushed shopping list
- 6 slices bacon chopped (small chop) shopping list
- 1 container of Philadelphia Cooking Cream ( savory garlic) shopping list
- 1/2 can evaporated milk shopping list
- 3/4 cup chicken stock shopping list
- 1/2 cup roasted red peppers shopping list
- 1/2 cup diced tomatoes (canned) shopping list
- 1/3 cup peas shopping list
- 2 tsp dried thyme shopping list
- salt and pepper to taste shopping list
- 1/2 box or cooked whole wheat pasta of choice (rotini, or penne work best) shopping list
- 1/2 cup grated parmesan/reggiano or to taste shopping list
How to make it
- No oil is really necessary as the bacon renders enough fat on it's own
- Add bacon, onion to pan and saute until onion is almost translucent or bacon is browned.
- Add chopped garlic and saute a min til aroma is released,
- add roasted red peppers, and tomatoes to pan.
- Simmer for 3 minutes til heated thru.
- Add evap milk, stock, thyme, peas, and cooked chicken
- Continue to simmer until sauce thickens 3 to 6 min
- Add cooked pasta to pan and top with shredded cheese
- Serve Immediately with warm crusty bread for sopping up sauce :)
