How to make it

  • Procedure:
  • Grease, line, & spray (with non-stick cooking spray) two 8X8X2-inch baking pans. (this is very important 'coz the White chocolate pieces causes cake to stick to the pan)
  • Measure & combine all dry ingredients together except the instant coffee granules. Set aside.
  • Mix instant coffee granules to buttermilk. Set aside.
  • Cream butter & sugar together.
  • Add in eggs 1 at a time then the Vanilla extract.
  • Stir in a 3rd of dry ingredients, followed by half of buttermilk to creamed butter-sugar. Continue stirring in ingredients until the last 3rd of dry ingredients is added in.
  • Mix in Zucchini & White Chocolate pieces to batter.
  • Pour batter into prepared baking pans.
  • Bake at preheated (preheat oven for at least 10 mins.) 350 degrees F oven for at least 30 minutes.
  • Check cake for doneness by inserting toothpick near the center of cake. If toothpick comes out without wet batter or a lot of crumbs clinging to it, then the cake is done.
  • *Another indication that the cake is done is the sweet smell of Chocolate-Coffee fragrant in the kitchen.
