Black Bean Soup

- 1 cup dried black beans shopping list
- 1 tablespoon olive oil shopping list
- 3 garlic cloves, minced shopping list
- 1 cup chopped onions shopping list
- 1 cup chopped red bell peppers shopping list
- 1 cup chopped celery, including leaves shopping list
- 1 cup diced carrots shopping list
- 5 cups water shopping list
- 2 bay leaves shopping list
- 1 cup diced tomatoes shopping list
- 1/8 teaspoon cumin shopping list
- 1 teaspoon dried oregano shopping list
- 1 teaspoon dried cilantro shopping list
- salt and pepper, to taste shopping list
How to make it
- Soak beans overnight; drain.
- In a large soup pot, heat oil. Add in garlic, onion, red peppers, celery, celery leaves and carrots. Cover and cook for about 10 minutes, until veggies start to soften.
- Add water, bay leaves, tomatoes, salt, pepper, cumin, oregano and cilantro. Bring to a boil. Add drained black beans.
- Bring to a boil and then reduce heat and simmer for about 2 hours or until beans are tender.
