Pistachio Pecan Cookies

- 1/2 Cup powdered sugar shopping list
- 1/2 Cup margarine or butter, softened shopping list
- 1/2 Cup oil shopping list
- 1 Teaspoon almond extract shopping list
- 2 eggs shopping list
- 1 (3 1/2 oz.) package of instant pistachio pudding and pie filling mix shopping list
- 1 to 3 Drops green food coloring shopping list
- 2 Cups flour shopping list
- 1/2 Teaspoon baking soda shopping list
- 1/2 Teaspoon cream of tartar shopping list
- 1/8 Teaspoon salt shopping list
- 1/2 Cup chipped pecans shopping list

How to make it
- In large bowl combine powdered sugar, margarine (or butter), oil, almond extract, eggs, pudding mix, and food coloring.
- Mix well.
- Lightly spoon flour into measuring cup; level off.
- Add flour, baking soda, cream of tartar, and salt.
- Mix well
- Stir in pecans.
- Cover with plastic wrap and refriderate 1 hour for easier handling.
- Heat oven to 375 degrees F.
- Shape dough into 1 inch balls then roll in sugar.
- Place 1 inch apart on ungreased cooking sheets.
- Bake at 375 for 10-15 minutes or until edges are light golden brown.
- Immediately remove from cookie sheets.
