Pistachio Pecan Cookies Recipe
These cookies are great for dinner partys, or around christmas time. They are really great, once you get past the fact that they are Green!

Ingredients
  • 1/2 Cup powdered sugar
  • 1/2 Cup margarine or butter, softened
  • 1/2 Cup oil
  • 1 Teaspoon almond extract
  • 2 Eggs
  • 1 (3 1/2 oz.) package of instant pistachio pudding and pie filling mix
  • 1 to 3 Drops green food coloring
  • 2 Cups flour
  • 1/2 Teaspoon Baking soda
  • 1/2 Teaspoon cream of tartar
  • 1/8 Teaspoon Salt
  • 1/2 Cup chipped pecans
  • Sugar

Directions
  1. In large bowl combine powdered sugar, margarine (or butter), oil, almond extract, eggs, pudding mix, and food coloring.
  2. Mix well.
  3. Lightly spoon flour into measuring cup; level off.
  4. Add flour, baking soda, cream of tartar, and salt.
  5. Mix well
  6. Stir in pecans.
  7. Cover with plastic wrap and refriderate 1 hour for easier handling.
  8. Heat oven to 375 degrees F.
  9. Shape dough into 1 inch balls then roll in sugar.
  10. Place 1 inch apart on ungreased cooking sheets.
  11. Bake at 375 for 10-15 minutes or until edges are light golden brown.
  12. Immediately remove from cookie sheets.
