Sage & Walnut Pesto

- Small bunch of sage (maybe 12-15 large leaves) shopping list
- Small bunch of flat leaf parsley (I used mostly stem because they're nice and sweet) shopping list
- 2/3 cup freshly toasted walnuts shopping list
- 1 clove of garlic shopping list
- 4 cm square chunk (1 cm thick) of parmesan cheese shopping list
- 1/2 tsp truffle oil (optional) shopping list
- Enough olive oil to make a paste shopping list
- salt and pepper to taste shopping list
- 1 cup reserved pasta water shopping list
How to make it
- Place first 6 ingredients in a food processor or blender.
- Whiz and slowly add olive oil until a soft smooth paste is made.
- Taste and adjust seasoning with salt and pepper, whizzing to combine.
- Toss a few spoonfuls of pesto into cooked pasta along with a few splashes of reserved cooking water until a light, creamy sauce is made.
- Refrigerate any leftover paste to use later.
