How to make it

  • Place first 6 ingredients in a food processor or blender.
  • Whiz and slowly add olive oil until a soft smooth paste is made.
  • Taste and adjust seasoning with salt and pepper, whizzing to combine.
  • Toss a few spoonfuls of pesto into cooked pasta along with a few splashes of reserved cooking water until a light, creamy sauce is made.
  • Refrigerate any leftover paste to use later.
