Lentil And Barley Stovetop Veggie Saute

- 1 cup puy lentils- cooked shopping list
- 1 cup barley- cooked shopping list
- 1 large carrot- diced shopping list
- 1 med onion- diced shopping list
- 2-3 large stalks celery- diced shopping list
- 1/2 of a jarred roasted red pepper- diced shopping list
- about 1 cup frozen chopped spinach shopping list
- cumin shopping list
- red wine vinegar shopping list
- salt and pepper to taste shopping list
- olive oil shopping list
How to make it
- Saute onion, carrot and celery in a bit of oil until softened.
- Add lentils, red pepper and frozen spinach.
- Stir and cook until spinach thaws.
- Add cumin, salt and pepper to taste and a splash of red wine vinegar.
- Add barley. Stir to combine and cook until warmed through.
