Spicy Nacho Bake

- 2 pounds ground beef shopping list
- 2 large onions, chopped shopping list
- 2 large green peppers, chopped shopping list
- 2 28 ounce cans of diced tomatoes, undrained shopping list
- 2 16 ounce cans of hot chili beans, undrained shopping list
- 2 15 ounce cans of black beans, rinsed and drained shopping list
- 2 11 ounce cans of whole kernal corn, drained shopping list
- 2 8 ounce cans of tomato sauce shopping list
- 2 envelopes taco seasoning shopping list
- 2 13 ounce packages of spicy nacho tortilla chips shopping list
- 4 cups of 16 ounce shredded cheddar cheese shopping list
How to make it
- In a dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink, then drain.
- Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring the a boil. Reduce heat; simmer, uncovered, for 30 mins. (The mixture will be thin)
- In each of the 2 greased 13-in x 9-in baking dishes, layer w/ 5 cups of chips and 4-2/3 cups of meat mixture. Top each w/ 4 cups of chips and 2 cups of cheese.
- Bake, uncovered, at 350 degrees for 20-25 mins or until golden brown.
- *Half all the ingredients to make one casserole*
