Indian Spiced Tofu-veggie Scramble

- 1 block firm or extra firm tofu (packed in water) shopping list
- 1/2 medium onion, chopped shopping list
- 1 or 2 carrots, finely diced shopping list
- 1/2 cup frozen corn kernels shopping list
- 1/4 tsp turmeric shopping list
- 1/2 tsp curry powder shopping list
- 1/4 tsp garlic powder shopping list
- 1/4 tsp black pepper shopping list
- 1 Tblsp soy sauce shopping list
- salt to taste shopping list
- fresh chopped cilantro shopping list
How to make it
- Remove tofu block from water, wrap in paper towels and press excess water out. Set aside.
- Saute onion and carrot in small amount of olive oil until tender. Add frozen corn and all seasonings, continue cooking for several minutes.
- Crumble tofu into skillet, break up any larger pieces with spatula. Add soy sauce, and combine ingredients well. Continue to saute until tofu is completely heated through and slightly browned.
- Adjust spices and add salt. Garnish with cilantro or stir in chopped cilantro just before serving. Serve with tortillas or bread.
