Black Bean Tortilla Pie

- 1 medium onion, chopped shopping list
- 1 medium green pepper, chopped shopping list
- 2 tbsp ground cumin shopping list
- 2 tbsp spicy pepper medley shopping list
- 1 tablespoon olive oil shopping list
- 3 garlic cloves, minced shopping list
- 2 cans black beans (15 ounces each) rinsed and drained shopping list
- 1 can vegetable broth (14-1/2 ounces) shopping list
- 1 package frozen corn (10 ounces) thawed shopping list
- 4 fwhole wheat or ancient grains lour tortillas (8 inches) shopping list
- 1 cup shredded reduced-fat cheddar cheese (4 ounces) divided shopping list
How to make it
- In a large skillet, saute the onion, green pepper, cumin and pepper in oil until vegetables are tender. Add garlic; cook 1 minute longer. Add beans and broth. Bring to a boil; cook until liquid is reduced to about 1/3 cup. Stir in corn and green onions; remove from the heat.
- Place one tortilla in a 9-in. deep round foil pan coated with cooking spray. Layer with 1-1/2 cups bean mixture and 1/4 cup cheese. Repeat layers twice. Top with remaining tortilla.
- Bake, uncovered, at 400° for 15 minutes or until heated through. Sprinkle with remaining cheese and return to oven for 2 minutes to melt cheese. Cut into wedges.
