This is a delicious Summer Salad perfect for BBQ's, a snack or even Dinner. Great to eat with slices of bread or Cuban Crackers. You can substitute grilled fish or chicken for the eggs.
Ingredients
- 2 eggs shopping list
- 1/2 avocado shopping list
- 1 small red onion shopping list
- 1 large tomato shopping list
Optional Ingredients
- sweet potato shopping list
- black beans shopping list
- plantains shopping list
- artichoke shopping list
- radish shopping list
- cucumber shopping list
- mango shopping list
- papaya shopping list
- pineapple shopping list
- Mozzarella Balls shopping list
Salad Dressing
- lemon juice and/or lime juice shopping list
- olive oil shopping list
- Crushed garlic shopping list
- oregano shopping list
- salt shopping list
- pepper shopping list
- cumin shopping list
How to make it
- Hard Boil the eggs
- Grill or Bake extra ingredients (sweet potato, pineapple, artichoke, plantain, etc)
- Whisk all the Salad Dressing Ingredients together
- Slice the Eggs, Avocado and Onion into strips
- Slice tomato
- Mix all the ingredients together
- Pour the Salad Dressing Over the Vegetables/Fruit/Eggs
