How to make it

  • Preheat the oven to 400 degrees, or heat the grill to medium
  • Toss the sliced potatoes in oil, salt and pepper.
  • To speed things up, place potatoes in a microwave safe bowl, cover with a wet paper towel and microwave for 3 minutes.
  • Spread potatoes in a single layer on a sheet pan and bake 20-30 minutes until golden brown and a little crisp.
  • If Grilling, spread potatoes in a single layer on the grill and cook 10-15 minutes, turning occasionally until browned. They burn very fast on the grill, so watch closely!
  • While potatoes are cooking, make the dressing.
  • Put yogurt, mayo, basil, garlic, dill, salt and pepper in the bowl of a food processor. Process until everything is finely chopped and blended.
  • Toss potatoes in dressing while still warm and serve immediately.
