Warm Potato Salad

- 4-5 medium russet potatoes, peeled and sliced very thinly shopping list
- 2T olive oil shopping list
- salt and pepper shopping list
- 1/4 C plain greek style yogurt shopping list
- 1/4 C mayo shopping list
- Large bunch basil, roughly chopped shopping list
- 1 clove garlic, pressed, or 1/4 t granulated garlic shopping list
- 1 t dried dill weed or 2T fresh dill chopped shopping list
- salt and pepper shopping list
How to make it
- Preheat the oven to 400 degrees, or heat the grill to medium
- Toss the sliced potatoes in oil, salt and pepper.
- To speed things up, place potatoes in a microwave safe bowl, cover with a wet paper towel and microwave for 3 minutes.
- Spread potatoes in a single layer on a sheet pan and bake 20-30 minutes until golden brown and a little crisp.
- If Grilling, spread potatoes in a single layer on the grill and cook 10-15 minutes, turning occasionally until browned. They burn very fast on the grill, so watch closely!
- While potatoes are cooking, make the dressing.
- Put yogurt, mayo, basil, garlic, dill, salt and pepper in the bowl of a food processor. Process until everything is finely chopped and blended.
- Toss potatoes in dressing while still warm and serve immediately.
