Black Bean Curry

- 2 Tbs olive oil shopping list
- 1 garlic clove shopping list
- 1 medium onion, chopped shopping list
- 1 green pepper, chopped shopping list
- 1 tomato, chopped shopping list
- 2 Tbs curry powder shopping list
- 1 15.5-ounce cans black beans, drained and rinsed shopping list
- 1/4 cup vegetable broth or water shopping list
- 1 Tbs lemon juice shopping list
- 3 Tbs fresh cilantro, chopped shopping list
How to make it
- Sauté garlic, onion, and pepper in oil until soft.
- Add tomato and curry powder, then stir.
- Add beans, broth, and lemon juice
- Simmer of 15 minutes.
- Stir in cilantro just before serving.
- Serve over fluffy basmati rice.
