Cheesesteak Scramble

- chopped deli roast beef shopping list
- roughly chopped sweet onion shopping list
- diced red bell pepper (or any color) shopping list
- eggs, beaten with a tiny amount of milk shopping list
- salt and pepper shopping list
- sliced muenster cheese (I used this because it melts really well) shopping list
How to make it
- Saute the onion, roast beef, and pepper in olive oil until soft. Remove from skillet.
- Add a tiny amount of butter for flavor, and pour in beaten eggs. Season to taste with salt & pepper.
- Lift up edges and tilt pan to let uncooked egg flow underneath. Return beef mixture to skillet and scramble with the egg. When almost set, place cheese slice in the middle and with spatula fold the scramble over the cheese so it ends up in the middle where it can get nice and melty - but be careful not to overcook the eggs.
- Remove to a plate and pretend you're eating a genuine Philly Cheesesteak!
