How to make it

  • Preheat oven to 350. Spray a 9" pie pan with nonstick baking spray containing flour.

  • In food processor or blender, combine milk, 2 tsp. vanilla, eggs, 3/4 cups sugar, 1/4 cup brown sugar, and baking mix. Blend or process on full speed until smooth, about 15-20 seconds.

  • Cut cream cheese into cubes and add to blender or food processor. Blend or process on high for 1-2 minutes until smooth. Pour into prepared pie pan and bake for 40-45 minutes until the pie is firm and set. Cool completely.

  • In a small bowl combine sour cream, 3 T sugar and 1 tsp. vanilla and mix well. Spread over cheesecake. Top with cherry pie filling. Chill at least 2 hours before serving. Best if chilled overnight.
