Beef And Black Bean Chili

- 2 tsp olive oil shopping list
- 2 cloves garlic, minced shopping list
- 1.5 tbsp chili powder shopping list
- 1.5 tsp cumin shopping list
- 1.5 tsp chipotle (I used Mrs. Dash's Southwest Chipotle blend, but anything would work) shopping list
- 2 tsp salt shopping list
- 1 lb ground beef (85-90% lean seems to work best) shopping list
- 1 29 oz can black beans (drained and rinsed) shopping list
- 1 14.25 oz can corn (drained) shopping list
- 1 14.5 oz can stewed tomatoes (I used "Mexican style" but plain also works) shopping list
- 2 8oz cans tomato sauce shopping list
How to make it
- Heat oil on medium heat in deep pot or skillet
- Add spices and garlic
- Stir for one minute
- Add ground beef and brown
- Once meat is browned, add corn, beans, and tomatoes
- Let simmer on medium heat for at least 30 minutes. The longer it's cooked, the better.
- Serve with shredded cheese, sour cream, and tortilla chips if desired
