Mexican Canneloni

- 1 and a half pounds of ground turkey shopping list
- 1 pkg of fajita seasoning shopping list
- 1 pkg of taco seasoning shopping list
- 6 large green onions, chopped shopping list
- 1 large red pepper , chopped fine shopping list
- 2 hot peppers( take out the seeds) minced shopping list
- I large jar of your favourite salsa (I like presidents choice black bean and corn) shopping list
- 1/2 cup of cream cheese shopping list
- 1 cup of refried beans shopping list
- 6 or 7 whole whole wheat tortillas shopping list
- 1 1/2 cups of old cheddar shopping list
- 1/2 cup of diced olives shopping list
- shredded lettuce shopping list
- 1/4 cup diced tomatoes shopping list
- chopped green onions shopping list
- sour cream shopping list
- cilantro shopping list
How to make it
- preheat oven to 325 degrees
- mix fajita and taco mix with ground turkey in a large skillet. mix and cook until all liquid is evaporated, and meat is cooked.
- set aside.
- mix beans, cream cheese, 6 large green onions red peppers, hot peppers in a seperate bowl, set aside
- In 9X13 pan layer 1 1/2 cups of salsa
- take a tortilla, spread a generous mixture of the bean mixture, add meat mixture, roll.
- place on salsa based pan.
- fill the pan with the tortillas. leaving about a hair span in between rolls. cover with the rest of the salsa. Cover with foil.
- Bake 40 minutes
- remove from oven and top with the cheddar cheese
- cook uncovered till cheese is melted.
- remove from oven .
- let stand 5 minutes, (covered).
- when you plate, add shredded lettuce. green onion, tomatoes, and green olives, sour cream and fresh cilantro
