This is a recipe that I adapted from Nigella Lawson on the FoodNetwork. It is really tasty and plates up pretty too. (Wish I knew how to use my digital camera si I could send ya'll a picture.)

Ingredients
  • 3 green onions, tops and bottoms snipped with kitchen shears
  • 2-tbspn butter
  • 1-tspn garlic
  • 1 pkg. Butterhead Lettuce (or 1 head) shredded
  • 2-cups frozen green peas
  • 1/2-cup hot chicken broth
  • 1-tspn coarse salt

Directions
  1. Cook the green onions and garlic in the butter until soft.
  2. Stir in the lettuce and when it is wilted add the frozen peas and chicken broth.
  3. Simmer - uncovered - until everything is tender and the liquid is flavorful and reduced.
