How to make it

  • Wash & slice unpeeled cucumbers. Mix with onion, garlic, peppers & salt in a large pan. Cover with ice cubes & mix again. Let stand 3 hours, then drain.Meanwhile, sterilize canning jars, rings & lids. (I do this in the dishwasher now.) Return vegetables to pot, add all other ingredients & bring to a rolling boil. Ladle into jars, wipe jar rims & seal.
  • I know that some authorities now insist on water processing, even for pickles. I have never done it and there has never been a problem since there is enough vinegar in the mix to prevent bacteria growing as long as the jar is properly sealed and the mixture has been brought to a rolling boil, so I do not have processing times. You can process in a water bath canner according to instructions for pickles.
