Rice Patties W/ Sweet Grated Coconut

- 250g glutinous rice flour shopping list
- 250 ml water shopping list
- 450g freshly grated coconut shopping list
- 400g sugar shopping list
- Toasted sesame seeds, to garnish (optional) shopping list
How to make it
- 1. In a mixing bowl, knead the rice flour and water to make a smooth dough that holds together and separates cleanly from the pan
- 2. With floured hands pinch off about 1 ½ tablespoons of the dough and shape into a small patty about 2 in (5cm) in diameter and about ½ in (1cm) thick.
- 3.) Drop the patties into a saucepan of boiling water.
- 4.) When they float to the top, scoop them out with a slotted spoon, drain
- 5.) Mix freshly grated coconut and sugar in a bowl.
- 6.) Place the cooked rice patties in the bowl of coconut mixture
- 7.) Garnish with toasted sesame seeds if desired.
- 8.) Serve at room temperature.
