Speedy Chicken Scarpariello

- 1 TB olive oil shopping list
- 2 lbs. boneless,skinless chicken thighs shopping list
- 3/4 tsp salt shopping list
- 3/4 tsp italian seasoning shopping list
- 1/2 tsp black pepper shopping list
- 1 pkg. (12 oz) fully cooked Italian flavored chicken sausage shopping list
- 2 sweet peppers,cored,seeded,cut into large dice shopping list
- 6-8 grape tomatoes shopping list
- 2 cloves garlic, chopped shopping list
- 1 lb pre-cooked potato wedges shopping list
- 1/4 c Italian salad dressing shopping list
How to make it
- 1 Heat oil in large,nonstick skillet over med-high. Trim thighs,cut into 1" pieces. Season with 1/4 tsp each salt,Italian seasoning and pepper. Saute 5 mins,stirring occasionally
- 2. Cut sausage into 1/2" pieces. Add to skillet along with the peppers,garlic and potatoes. Stir in remaining1/2 tsp salt,1/2 tsp Italian seasoning and 1/4 tsp pepper. Add Italian dressing and stir to combine.
- 3 Cover skillet and cook over med- high 10 mins,uncover add tomatoes and cook 5 mins. more,stirring occasionally.
- 4. Remove skillet from heat and let rest 5 mins before serving.
