How to make it

  • 1. Seal lamb in batches, and set aside.
  • 2. Heat oil until thin. Add whole spices and cook until they begin to crackle.
  • 3. Fry onions until golden brown (really, really brown, bits of black).
  • 4. Add ground spices, garlic and ginger and mix.
  • 5. Add lamb and tomato paste to onion and spices.
  • 6. Add enough water to help coat meat. Reduce heat and cook, covered for about 45 minutes, stirring periodically.
