Whole Spices
- 3 bay leaves shopping list
- 2 tsp whole cloves shopping list
- 3 black cardamom shopping list
- 2 tsp green cardamom shopping list
- 1 piece cassia bark shopping list
- 1 tsp fennel seeds shopping list
Ground Spices
- 1 tsp turmeric shopping list
- 1 tsp chilli powder shopping list
- 3 tsp coriander shopping list
The Rest
- 1/4 cup bland vegetable oil shopping list
- 2 tsp crushed ginger shopping list
- 2 tsp crushed garlic shopping list
- 2 tblsp tomato paste shopping list
- 1 kg red onions, diced, add 1-2 tsp salt shopping list
- 1 kg diced lamb shopping list
How to make it
- 1. Seal lamb in batches, and set aside.
- 2. Heat oil until thin. Add whole spices and cook until they begin to crackle.
- 3. Fry onions until golden brown (really, really brown, bits of black).
- 4. Add ground spices, garlic and ginger and mix.
- 5. Add lamb and tomato paste to onion and spices.
- 6. Add enough water to help coat meat. Reduce heat and cook, covered for about 45 minutes, stirring periodically.
