Saag Paneer

- 2 bunches (500g) English spinach shopping list
- 2-4 tbsp vegetable oil shopping list
- 1 tsp cumin seeds shopping list
- 2 tsp crushed ginger shopping list
- 2 tsp crushed garlic shopping list
- 1 onion, chopped (add 1/2 tsp salt) shopping list
- 1-2 tblsp tomato paste shopping list
- 225g paneer shopping list
- 1 tsp methi leaves (dried fenugreek leaves) shopping list
- 1/2 to 1 tsp of garam masala shopping list
- 3 tbsp cream shopping list
How to make it
- Rinse and roughly chop spinach. Microwave on high for 5 minutes
- Add to blender with enough cold water to form a purée. Set aside
- Heat oil in saucepan until thin. Fry cumin seeds until fragrant.
- Add onions and fry until golden brown.
- Add ginger and garlic and fry until they have a cooked fragrance.
- Add spinach purée and tomato paste and cook on medium heat for 5 minutes.
- Add methi leaves, garam masal and cream and stir through. Add paneer and reduce to low heat. Cook for further 2 to 5 minutes until warmed through.
