How to make it

  • Rinse and roughly chop spinach. Microwave on high for 5 minutes
  • Add to blender with enough cold water to form a purée. Set aside
  • Heat oil in saucepan until thin. Fry cumin seeds until fragrant.
  • Add onions and fry until golden brown.
  • Add ginger and garlic and fry until they have a cooked fragrance.
  • Add spinach purée and tomato paste and cook on medium heat for 5 minutes.
  • Add methi leaves, garam masal and cream and stir through. Add paneer and reduce to low heat. Cook for further 2 to 5 minutes until warmed through.
