Chocolate-Topped Peanut-toffee Bars

cookie Base
- 1 Package of peanut butter cookie mix shopping list
- 3 TBS oil shopping list
- 1 egg shopping list
Filling
- 1 C butter, cut into small pieces shopping list
- 1 C packed brown sugar shopping list
- 1 1/2 C lightly crushed potato chips shopping list
- 1 C salted peanuts shopping list
Topping
- 1 12-oz bag or 2 C semisweet chocolate chips shopping list
How to make it
- Heat oven to 350 F. Spray sides and bottom of a 9x13 inch baking dish with cooking spray.
- In a large bowl mix cookie base ingredients until a soft dough forms. Press in bottom of dish and bake 10 minutes or until dough is set.
- Meanwhile in a 1-qt saucepan, melt butter over medium heat , stir in brown sugar. Heat until boiling, stirring frequently. Boil 1 min stirring constantly.
- Sprinkle potato chips and peanuts over partially baked base. Pour brown sugar mixture over chips and peanuts. Bake 15 mins longer or until surface is bubbly.
- Sprinkle chocolate chips evenly over chips and peanuts and return to the oven for 2 mins to soften chocolate. Spread chocolate over filling.
- Cool completely for 2 hours or place in the fridge for 30 mins until the chocolate is set. Cut into 8 rows by 4 rows.
- Store covered at room temp.
