Indian-esque Lentils

- 1/4 cup lentils (dry) shopping list
- 1/2 carrot, sliced shopping list
- 1/2 medium onion, diced shopping list
- 1 cup chicken stock (optional, use vegetable stock if vegetarian) shopping list
- 1 tbsp curry powder shopping list
- 1/2 tsp red pepper flakes shopping list
- 1 tbsp EVOO shopping list
- Dollop of nonfat yogurt (optional) shopping list
How to make it
- In a medium pot, cook carrot and onion in EVOO for 2-5 mins, or until the onion is somewhat translucent and carrot is slightly soft
- Add the rest of ingredients, bring to boil, reduce to simmer, and simmer, covered, for 45 minutes, until lentils are fully cooked
- Add dollop of yogurt, if desired, and enjoy.
