Tofu Sautéed With Corn, Garlic, Tomato, & Basil

- 1 package of lite firm tofu shopping list
- 1 ear of corn shopping list
- 6 cloves of garlic (or your preferred amount, I LOVE garlic) shopping list
- 2 large tomatoes shopping list
- 5-6 large leaves of fresh basil shopping list
- 1/2 tsp marjoram* (optional) shopping list
- 1/2 tsp oregano* (optional) shopping list
- non-stick cooking spray shopping list
- 2 tbsp olive oil (may need to add a bit more depending) shopping list
- salt & pepper* (optional) shopping list
How to make it
- 1. Drain tofu prior to preparing the meal.
- 2. Once drained, cut tofu into small cubes. *You can use your descretion - I like my pieces smaller and they cook faster, but if you like larger cubes, allow a bit for time for them to cook.
- 3. Finely chop up garlic. Set aside.
- 4. Spray frying pan with non-stick cooking spray, then add olive oil. Heat stovetop to medium heat. Add in garlic and let heat up, but don't let burn!
- 5. Chop up tomatoes in small chunks. Set aside. *Again, as small or big as you want.
- 6. Cut corn off the cob. Set aside.
- 7. Add in tomatoes, corn, and basil leaves (you can just rip these into small pieces), and stir the mixture.
- 8. Lastly, add in the tofu and continue to stir the mixture.
- 9. Monitor the heat and adjust accordingly. The dish will be cooked completely when the corn is just soft enough to eat, but still crisp.
- 10. Add salt, pepper, and spices if you desire.
- Enjoy!
