How to make it

  • Preheat oven to 350°F and grease a loaf pan.
  • In a medium bowl, whisk together flours, Kamut flakes, baking powder, baking soda, spices and salt.
  • In a large bowl, beat together the flaxseed mixture, sugar, coconut milk and vanilla.
  • Add the dry ingredients all at once and stir just to moisten.
  • Add all the apples and fold in until just incorporated.
  • Bake for 1 hour on the lowest rack of the oven - or until a toothpick inserted in the center of the loaf comes out clean.
  • Cool in the pan about 10 minutes, then turn out of the pan onto the rack and cool completely.
