How to make it

  • To make the sauce:

  • Mix all ingredients and heat in a small saucepan for 10 minutes
  • or until thickened.
  • For ribs:

  • Boil ribs in pineapple juice for 10 minutes, using just enough juice to cover the ribs.
  • Remove from juice and reserve 1/4 c. for the sauce.
  • Place on the grill over low heat and baste with sauce until thick and sticky.
  • For pulled pork:

  • In a frying pan, sear the pork butt or 1/3 of a good-sized tenderloin on all sides.
  • Boil in pineapple juice for 20 minutes, using just enough juice to cover the meat.
  • Remove from juice and reserve 1/4 c. for the sauce.
  • Pull apart the pork with a fork, and place in a slow cooker. (If using tenderloin, you may need to cut it in quarters and let it cook in the sauce for an hour before it will pull apart. The lower fat content makes it denser, and therefore the enzyme does not break down the meat as well.)
  • Add the sauce, and set on "high" for 2 hours.
  • Note:

  • You can use boneless pork ribs for pulled pork as well. Boil them for 10 minutes and then pull apart.
