Coconut Lemongrass Tuna Loin

- 2-4 lbs. fresh albacore tuna loin (omit butter if using Yellow fin) shopping list
- 1/2 cup coconut-lemongrass flavored sake shopping list
- 1/2 tsp. fresh rosemary (chopped) shopping list
- juice of 1/2 a lemon (about 2 tbs) shopping list
- 1/2 tsp. fresh minced garlic shopping list
- 4 Tbs. real butter shopping list
How to make it
- *pre-heat oven or grill (oven @ 350*F) (propane grill @ med/hi) (charcoal grill @ 10 min.)
- *in med. ziplock bag mix together sake, lemon juice, rosemary, and garlic. *add tuna loin (whole) and marinade for about 10 min.
- *slit open top of tuna (about 1" deep) and place chunks of butter inside. *Cook for 10-20 min. depending on how dry you prefer your tuna.
- (10 min. for rare, red) (15 min for medium, pink) (20 min for med well, whiteish)
- ~great served with rice and green salad w/ fresh tropical fruit (mango, kiwi, or papaya) and cilantro
