How to make it

  • Peal corn on the cob removing the silk and keeping the husks attached
  • Cut the cob off, leaving a small piece at the base
  • Soak husks in a bowl of water
  • Chop the cobs of corn into 1-2 " segments
  • Cut Summer squash and onion into 1-2" segments
  • Mix butter, chives, garlic, salt and pepper in med. bowl
  • Add vegetables to butter mixtures and mix to coat
  • Assemble skewers starting with the corn base and ending with the tip of cob, alternating with other vegetables.
  • Wrap the husks back around the skewer and wrap in foil
  • Cook over the grill for about 15 minutes
  • Remove foil and cook another 5 minutes
