Chicken Dinner Pie

- Pastry for 9" two crust pie shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons flour shopping list
- 1 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1/8 teaspoon ground thyme shopping list
- 1/2 cup chicken broth shopping list
- 3/4 cup light cream shopping list
- 2 cups cubed cooked chicken shopping list
- 10 ounce package frozen peas and carrots cooked and drained shopping list
How to make it
- Heat oven to 425.
- Prepare pastry then cut top into lattice strips.
- Melt butter in large skillet over low heat then stir in flour, salt, pepper and thyme.
- Cook stirring until mixture is smooth and bubbly then remove from heat.
- Stir in chicken broth and cream and heat to boiling stirring constantly.
- Boil and stir for one minute then stir in chicken and vegetables.
- Pour into pastry lined pie pan and cover with lattice top.
- Cover edge with 3" inch strips of foil to prevent excessive browning.
- Remove foil for the last 15 minutes of baking.
- Bake for 35 minutes.
