Fried Zucchini Parmesan

- 1 large zucchini shopping list
- 1 large or 2 small- med eggs shopping list
- vegetable oil shopping list
- 1 1/5 cups seasoned Italian breadcrumbs (more if needed) shopping list
- 1 cup all purpose flour shopping list
- paprika shopping list
- garlic powder shopping list
- salt & pepper shopping list
- 5 cups cooked pasta shopping list
- 3-4 cups tomato sauce shopping list
- 6 oz fresh mozzarella, thickly sliced shopping list
How to make it
- Cut zucchini on a bias and plate in a single layer
- Sprinkle lightly with paprika and garlic powder on both sides
- Pour bread crumbs in a shallow bowl or plate
- Pour flour in a separate shallow bowl or plate
- Beat egg in a separate shallow bowl
- One at a time: Lightly coat zucchini pieces in flour, dip in egg, then coat in bread crumbs. Place in a single layer and set aside.
- Heat vegetable oil in a large saucepan over med heat (Pour enough vegetable oil so that it is about 3" deep)
- Carefully fry each zucchini slice until golden brown, be careful not to cook too many at a time and crowd the oil. See Photo
- Place on paper towels and immediately sprinkle with a pinch of salt and pepper.
- Enjoy the zucchini as a side dish or continue with the recipe to make the meal!
- Cook the pasta of your choice according to package directions (we used whole wheat egg noodles)
- Top pasta with your favorite tomato sauce (we use my boyfriends delicious homemade sauce)
- Add a few thick slices of fresh mozzarella
- Top each mozzarella slice with a fried zucchini
- Yum!
