How to make it

  • Cut zucchini on a bias and plate in a single layer
  • Sprinkle lightly with paprika and garlic powder on both sides
  • Pour bread crumbs in a shallow bowl or plate
  • Pour flour in a separate shallow bowl or plate
  • Beat egg in a separate shallow bowl
  • One at a time: Lightly coat zucchini pieces in flour, dip in egg, then coat in bread crumbs. Place in a single layer and set aside.
  • Heat vegetable oil in a large saucepan over med heat (Pour enough vegetable oil so that it is about 3" deep)
  • Carefully fry each zucchini slice until golden brown, be careful not to cook too many at a time and crowd the oil. See Photo
  • Place on paper towels and immediately sprinkle with a pinch of salt and pepper.
  • Enjoy the zucchini as a side dish or continue with the recipe to make the meal!
  • Cook the pasta of your choice according to package directions (we used whole wheat egg noodles)
  • Top pasta with your favorite tomato sauce (we use my boyfriends delicious homemade sauce)
  • Add a few thick slices of fresh mozzarella
  • Top each mozzarella slice with a fried zucchini
  • Yum!
