Fresh Bruschetta

- 1 small loaf french baguette or Italian loaf shopping list
- 1 cup cherry tomatoes, chopped shopping list
- 4 cloves garlic shopping list
- 1 tsp balsamic vinegar shopping list
- 2 tbs extra virgin olive oil shopping list
- 2 tbs fresh basil, roughly chopped shopping list
- 6 oz fresh mozzarella shopping list
How to make it
- Add tomatoes and vinegar to a small bowl and set aside
- In a non stick pan, heat olive oil.
- Cook 3 cloves of garlic in 2 Tbs olive oil until golden brown, stirring constantly
- Add garlic and oil to tomatoes
- Slice loaf of French or Italian bread on a bias and place on oiled cookie sheet in a single layer;
- Bake at 350 for 5 minutes or less to lightly toast bread. The bread can also be toasted on a grill for a bit more flavor (this goes quickly so be careful not to burn your toast!)
- Immediately rub with a garlic clove and drizzle with extra virgin olive oil.
- Mix basil into tomato mixture
- Top each slice toast with a slice of fresh mozzarella and a heaping spoonful of tomato mixture.
- Serve immediately.
