Easy Cornbread Zucchini Stuffing

- 1 cup finely grated or shredded zucchini well drained shopping list
- 1 small onion grated shopping list
- 1 small tomato chopped shopping list
- 1 garlic clove minced shopping list
- seasoning to taste ( chopped herbs, salt and pepper to taste etc ) shopping list
- 1 cup yellow cornmeal shopping list
- 1 cup baking mix shopping list
- 1 egg shopping list
- 1 Tbs olive oil shopping list
- 1 Tbs mayonnaise shopping list
- 1/4 cup milk shopping list
How to make it
- Mix all by hand and place in a Pyrex or glass pie plate
- Cook hi in Micro for 2 minutes,
- Pause and scramble the mixture.
- It will still be soft and loose
- Continue to cook another minute or two until mixture appears set but not dry ( varies with your oven's wattage )
- Remove from oven and use a fork to loosen and mix into a stuffing texture.
- Great plain or moisten with a gravy
- Note: time varies with the wattage of your micro oven ,so be careful to not over cook as it may continue to cook when out of the oven
