How to make it

  • Place tomatoes in a single layer in pan
  • Toss to coat with the olive oil, herbs, spices and salt
  • Roast in a 400F oven about 15 minutes or until tomatoes soften, collapse slightly or crack
  • Cool and use as desired
  • Store in refrigerator in a covered container
  • Note: the liquid from the tomato pan is super delicious and use that in sauces and soups or salad dressing!

    AWESOME- always get a ton of tomatoes from the garden- ALWAYS looking for new ways to use and cook 'em.
