Roasted Cherry Tomatoes

- cherry tomatoes as many as you like shopping list
- extra virgin olive oil to coat shopping list
- coarse salt as desired shopping list
- dried rosemary or dried basil as desired shopping list
- garlic powder as desired shopping list
How to make it
- Place tomatoes in a single layer in pan
- Toss to coat with the olive oil, herbs, spices and salt
- Roast in a 400F oven about 15 minutes or until tomatoes soften, collapse slightly or crack
- Cool and use as desired
- Store in refrigerator in a covered container
- Note: the liquid from the tomato pan is super delicious and use that in sauces and soups or salad dressing!
