How to make it

  • Steam green beans till fork tender
  • Immediately drain and stop cooking process by running under cold water, then drain well again
  • In a food processor add the cilantro, garlic, lemon juice, olive oil and process into a smooth paste; adding more olive oil if needed
  • Mix gently into green beans
  • Season to taste with salt and fresh cracked pepper
  • Note: optional ingredient is to add some walnuts to the cilantro mixture as you process the mixture
  • Note: this can be a salad or veggie side dish
