Self-saucing Fruity Pud Recipe
This is my Mum's favourite pudding. She makes it whenever she has unexpected guests for tea and it always goes down a treat. Mum uses packaged dried fruit, but I make up my own mixture because I don't like peel. Delicious with icecream or cream.

Ingredients
  • Sauce:
  • 1 cup sugar
  • 1 1/2 Tblsp butter
  • 3 cups boiling water
  • Pudding:
  • 2 Tblsp melted butter
  • 3/4 cup milk
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 cup dried fruit
  • 3/4 cup brown sugar
  • 2 cups flour
  • 1 tsp mixed spice

Directions
  1. In a 7" (18cm) pot put sauce ingredients, mix and slowly bring to the boil.
  2. In a bowl mix the butter and sugar then add the milk.
  3. Add all other ingredients and mix thoroughly.
  4. Pour on top of the sauce in the pot.
  5. Coove the pot and cook on a verylow heat for approx 35 min.
