How to make it

  • Place the pork into a medium pot and add enough chicken stock to cover.
  • Bring to a boil, reduce heat and simmer about 1 hour, or until tender enough to pull apart.
  • Remove pork from stock and shred.
  • Add warmed adobo sauce and mix to coat thoroughly.
  • Serve on a bed of shredded lettuce ( I put wedges of iceberg lettuce through the slicer blade on my food processor. It worked like a dream.)
  • Top with pickled red onions and serve with lime wedges.
