Adobo Pork

- 4-6 C. chicken stock shopping list
- 2 1/2 lbs. pork butt, trimmed and cut into 2-inch cubes shopping list
- 1 head iceberg lettuce shopping list
- 1 - 1 1/2 C. Adobo sauce* shopping list
- pickled red onions* shopping list
- lime wedges shopping list

How to make it
- Place the pork into a medium pot and add enough chicken stock to cover.
- Bring to a boil, reduce heat and simmer about 1 hour, or until tender enough to pull apart.
- Remove pork from stock and shred.
- Add warmed adobo sauce and mix to coat thoroughly.
- Serve on a bed of shredded lettuce ( I put wedges of iceberg lettuce through the slicer blade on my food processor. It worked like a dream.)
- Top with pickled red onions and serve with lime wedges.
