Cheese & Bacon Muffins

- 500 g self raising flour shopping list
- 500 ml carton butter milk shopping list
- 2 eggs shopping list
- Pinch of salt shopping list
- 250 g bacon (fried and finely chopped) shopping list
- Few sprigs parsley (chopped) shopping list
- Cup of grated cheese (can mix some parmesan cheese in with the cheddar) shopping list
- spring onions – finely chopped shopping list
- Spoon of mustard shopping list
- Some ground black pepper shopping list
How to make it
- 1. Mix buttermilk, eggs, mustard and seasoning in a jug.
- 2. Mix all other ingredients in a bowl.
- 3. Add 1 to 2 mix till just mixed together.
- 4. Scoop onto greased muffin tin (makes 12).
- 5. Bake at 180 C for 25 minutes.
- Serve as they come out of the oven.
