Tomato Bread

- 6 slices sourdough bread, staled in oven or toasted in skillet, however you stale it, it must be as dry as possible. shopping list
- 1 medium to large yellow onion small dice shopping list
- 1/2 to 1 lb hickory smoked bacon shopping list
- couple cloves fresh garlic minced shopping list
- 1 to 2 tbsp sugar shopping list
- 2 to 3 large cans diced tomatoes shopping list
How to make it
- toast bread in oven at about 300
- using kitchen sheers cut bacon into bits and saute until browned and crunchie
- remove bacon bits from skillet and reserve about half the fat
- add the onion and carmalize,
- add garlic and sweat, remove onions and garlic set aside
- crumble bread into bacon fat, you may add more fat it bread remains too dry,
- turn up heat just before smoke point add the tomatoes juice and all, add the onions and garlic and bacon bits
- add sugar, reduce heat and simmer about 20 minutes on medium low heat. salt (always kosher salt) and fresh ground black pepper to taste
- this should be thick and not too juicy. so simmer until it thickens up.
