How to make it

  • toast bread in oven at about 300
  • using kitchen sheers cut bacon into bits and saute until browned and crunchie
  • remove bacon bits from skillet and reserve about half the fat
  • add the onion and carmalize,
  • add garlic and sweat, remove onions and garlic set aside
  • crumble bread into bacon fat, you may add more fat it bread remains too dry,
  • turn up heat just before smoke point add the tomatoes juice and all, add the onions and garlic and bacon bits
  • add sugar, reduce heat and simmer about 20 minutes on medium low heat. salt (always kosher salt) and fresh ground black pepper to taste
  • this should be thick and not too juicy. so simmer until it thickens up.
