Mini Cheesecakes

- 2 packs cream cheese shopping list
- 1/2 cup sugar shopping list
- 2 eggs shopping list
- cap of vanilla shopping list
- pinch of salt shopping list
- skor chips (optional) shopping list
- favourite cookie base (I use a butter cookie with a chocolate top and caramel center) shopping list
How to make it
- Preheat your oven to 350
- Soften your cream cheese, mix in the remaining ingredients until well beaten to a smooth and creamy consistancy.
- Line muffin tins, and place your cookie base in the muffin tins.
- scoop 1/4 cup of your cheesecake mixture into each muffin tin (I use an ice cream scoop, keeps it neat).
- Bake for 12 - 15 minutes or until cheesecakes are set and cracked on the tops.
- Let cool on a wire rack.
- *If you're putting the skor bits in them, I like to drizzle the tops with caramel directly before serving*
